Tomato soup is one of my favorite soups and I love that it’s quick and made with ingredients I usually have at hand. When it comes to other soups, I tend to use packaged soups out of convenience.
This is recipe for 2 big plates of soup
• 1/4 cup rice
• 1tbsp butter (or oil)
• 1tbsp flour
• 250 ml pasteurised Tomato juice
• 1 small Tomato, blended
• 500ml water
• Pinch of sugar
• Salt (1/3tsp) OR general seasoning 1 tsp (flat) Add more to taste
• 1 tbsp cooking cream (or 2 tbsp)
Start by cooking rice in a separate small pot. 1/4 cup (maximum 1/2) cup of rice. Add a bit of salt around 1/2 tsp. Cook around 18 min (almost done), it takes much longer to cook in soup only. You can substitite rice with soup pasta which takes less time to cook. While the rice is cooking prepare the soup in another pot.
Medium pot: melt butter square on medium heat (there should be around 1 tbps when melted) then add the 1tbsp of flour and combine. Pour in 250ml tomato sauce and the 1 blended tomato. Stirr and finally add 500ml boiling water. Add a pinch of sugar, 1/3 tsp of salt (or 1tsp general seasoning which includes salt) you can add more salt after tasting. Its easy to add salt, but hard to remove.
Simmer the soup, preferably covered, untill rice is almost done, around 10 min. Then add the drained rice to the soup and cook 5 more minutes together, untill rice is soft. Finally add 1 tbsp cooking cream and cook 1 more minute and it’s done!
